First of all congratulations for your new business here in Foligno.
I bumped into this blog by pure chance (actually I don't remember how)...very interesting.
I'm a full-blooded "folignate" who spent last 3 years studying in Holland. I came back a couple of months ago and I was just wondering about that new restaurant by Giotti's tavern!
I had a look at almost all the posts of your blog and it seems you've acclimatized quite well...you've not only survived the torrid Mediterranean Summer but even the painful olive harvest (but what about the "benfinita" party at the end?) with the old fellows and their dialect. However you were still lucky... in Central Italy (Tuscany, Umbria, and Lazio) dialects are still quite similar to standard Italian...have you ever heard someone from Naples, Sardinia or Bergamo?
A new address for your "food joyrides" (you've to know your competitors...): try "Antiche Sere" in Bevagna, it's a very small "osteria" near Porta Cannara. They have got not more than 6 tables (10 during summer)...I bet it will enter in your "Favorite Umbrian Restaurant" list. A Canadian friend of mine still wirtes me emails about the dinner we had there last year!
