This time of year I love to walk around and "forage" in my nieghbors' yards. So far I've been able to find quince, pomegranates, apples, chestnuts and persimmons. During the grape harvest this year I had frozen alot of grape must with the intention of making Cugná which is a Piedmontese jam made from grape must and fall fruits. The original recipe calls for figs and hazelnuts (along with apples, pears, quince, squash and the grape must). But figs are long gone and we don't grow hazelnuts here, so I sustituted the ingredients I found around.
5L grape must, reduced by half, 2 apples, 2 pears, 2 quince, 2 pomegranates, 2 persimmons, a handful of chestnuts, a handful of walnuts, 200g winter squash.
